Simple Avocado Toast
For week #43 of my 2018 challenge to try one new whole-food plant-based (WFPB) recipe each week, I kept it simple and made avocado toast.
I LOVE avocado toast. My go-to recipe is:
Toast
Mashed avocado
Sliced tomato
Salt, pepper, and dried dill sprinkled on top.
Camryn is a nursing student who has been helping me out with ideas for the blog and the mHp Facebook group. (Not a member? Join us!) She sent me a picture of avocado toast topped with strawberries, which I had never seen before!
I decided to give it a try. It was quite good! Kind of like adding fruit to a vegetable salad, the strawberries add a sweet, fresh taste to the avocado toast.
What I like about avocado toast:
Simple
Quick
Delicious
Nutritious
Filling
Ingredients:
Toast
Mashed avocado
Toppings of choice
Spices/seasonings of choice
Steps:
Toast some bread.
Mash an avocado. (I use a fork.) You can mash it as smooth or as chunky as you like. (I like mine a little chunky.)
Add toppings of choice - like veggies, fruit, nuts/seeds, etc - or just leave it plan.
Add spices/seasonings of choice - like salt, fresh cracked pepper, dried dill, red pepper flakes, etc - or just leave it plain.
